BRIEF REPORT on Using Iodinated Components for Iodizing Food-Stuffs
The problem of iodine insufficiency is known for a long time, but there are only few people knowing the fact that the iodine deficiency in daily supply (in feeding) leads not only to family tragedies, but also to difficult social consequences.
Organism of an adult person contains 20-25 mg of iodine, half of which is concentrated in a thyroid gland. The last has a property to acquire iodine from blood and concentrate it. The tissue of thyroid gland contains 25 times more iodine than blood does, and during thyrotoxicosis 360-400 times more. About 2/3 of iodine is getting out of organism by kidneys, and the rest of iodine along with the blood arrives to the thyroid gland.
The basic physiological role of iodine means formation of the thyroid gland hormones (thyroxine, thriodthyronine).
These hormones fulfil complex multiphase functions, namely:
- Intensify oxidizing processes, control a heat production;
- Influence mental state of organism and its ability to resist unfavorable factors of environment;
- Influence physical and mental development, differentiation and forming the tissue;
- Regulate functions of the central nervous system, influence the activity of a cardiovascular system and liver;
- The thyroid hormones interact with other glands of an internal secretion (pituitary body, sexual glands) and influence water-salt metabolism, metabolism interchanging of proteins, lipids, carbohydrates, intensify metabolic processes in an organism, increase consumption of oxygen by tissues.
The optimal daily norm of consumption of iodine compounds 100-200 mcg, the necessity of it is increased up to 200-250 mcg during the pregnancy and feeding a child by mother milk.
The iodine deficiency in organism leads to progressing of endemic struma, that is characterized by failure of synthesizing of thyroid hormones and depressing functions of a thyroid gland.
The deficit of iodine in an organism of the women results to infertility, and during pregnancy - to outbursts, increases number of birth of physically and mentally defective children. In connection with a decrease of resistance of an organism to taints, there appears lowering of development coefficient for children, manifests itself mental retardation, cretinism, there also increases level of childish deaths.
It is necessary to pay attention to the fact that iodine not only prevents thyroid gland diseases, but also helps to decrease a level of beaming of a thyroid gland by a radioiodine 131 in 2-3 times.
To prevent diseases connected with the iodine deficiency many states produce iodinated salt, which is received by attachment of potassium iodide or iodite of potassium in an amount of 25g per 1 ton of salt.
The iodate of potassium (KIO3) is a strong oxidant, in a mixture with organic stuffs in case of shock blasts out, therefore it is not recommended to use as the food component. In combination with organic components it can lead to irreversible acidification and chemical update, with formation of combinations with acritical chemical properties. The strong oxidizing properties of iodate of potassium damage enzymatic systems and cause appearance of a super oxide radicals. (Helzel B., Mano M. Using it can result in immediate wasting of indispensable components without further recovery.
The practice of using iodinated salt has some deficiencies, namely:
Firstly, excesses of the iodinated salt can be harmful for a human body, and during some diseases iodinated salt is prohibited at all.
Secondly, the iodine as an element containing in salt is a nonresistant chemical combination, that results its considerable loss in a shelf-life;
Thirdly, to iodine from the chemical combination could get into blood, a human body must make additional operations (Delange F., Burgi H. Insufficiency of iodine and its consequences for the population of European countries // a Scientific magazine. UND -1994.).
During long-term storage and heat treatment (boiling, frying products with iodinated salt) iodine is losing its properties.
To iodize food people use "Iodkasein" and yeast with the iodine content, which are more preferential in comparing with the traditional iodites and iodates, but make modifications to the "know-how" of final production. Despite of all positive virtues of the iodinated combinations mentioned above, it is not possible to use them for iodizing water and soft drinks.
There is one more important reason making us to think about usage of Iodcasein. American scientist psychiatrist Nil Barnard in the process of studying his patients found a new type of food addiction - affection for cheese. It has been determined that every kind of cheese contains a specific albumen - casein which in the process of digestion disintegrates thus forming substances influencing a man like morphine. If a man uses casein-containing products for a rather long period (in our case that is cheese), he becomes consequently an addict. Nowadays a number of sound legal venues concerning such a fact are considered in America (newspaper "News World" # 28 (498), p. 21 dated July 8, 2003).
Besides casein badly assimilates with a human body and settles in veins, tissues thus causing hypertension, arthritis, allergy and other atherosclerotic changes in blood veins (TIRONET - site). The same opinion has French scientist Piere Rolan.
Water and iodine participate practically in all vital processes in the human organism, and the expenditure of iodine depends on pressure one can get during the day. Water and iodine regulate temperature regime of the body. Therefore, its consumption should be balanced depending on the organism necessity, and this problem can be solved by combining consumption of iodine with water. The exuberant iodine comes out only by water (by urine).
The idea of iodizing water is not a new one, it was utilized before, but it has not been widely spread and applied because of absence of reliable and cheap technologies for iodizing water and soft drinks.
The human organism reacts negatively to any concentrated affects. And if it receives concentrated iodine drugs constantly without an indispensable amount of water it will lead to negative effects. The international practice testifies that. The constant consumption of a preventive iodine dose (mismatching demand of an organism) can lead to a hyperthyroidism (IIH) which is induced by iodine - negative effect after using iodine components. Studying IIH, the scientists came to the conclusion, that self-regulation of iodine consumption during preventive actions is very important.
The iodine was used to decontaminate potable water for the healthy population and, that is very nonrandom, it has not call hyperthyroidism (IIH). The Ukrainian scientists of National Academy of Ukraine and specialists of the international concern "Yark-Kiev" and Ltd "Iodis" have developed "Iodis-concentrate" (Technical specifications 14326060.003-98), which is produced on the basis of mineral water recovered from a deep geological horizon well, artificially saturated with iodine ions biologically of fissile iodine, up to concentration 10-25 mg/l.
" Iodis- -concentrate" is recommended to be used in production of potable, dietetic,
mineral water, soft drinks, bread production (practically without complex technology
and preparation of these products), almost all the products prepared on the water basis
(bread, ice cream, cakes, milk and so on) for prophylactics of diseases caused by lack
of iodine in human body.
The concentrate due to its nature, high biological activity and repeatability, is not capable to call glut of an organism with iodine and as result - hyperthyroidism.
While using "Iodis-concentrate" (IC) different bread products, potable, mineral water, soft drinks, cow milk, dairy products and other food stuff were developed. They are introduced into production of many world countries under the "Iodis" trademark
And it is not incidentally. The water and iodine is the only exact natural combination (it is confirmed by the chemical composition of the world ocean), which one has exhibited and has affirmed the positive affect not only in the food production, but in plant industries , animal industries and poultry keeping. It is conditioned by that the interplay of water and iodine, in the form of ""IC", results to realization of the well-known properties of water, which consist in creation associations (mesomorphic patterns) of water which possesses biological activity. The major difference of "IC" from other widely used joints of iodine is that in a system of " ion of iodine - water " in a classic situation, the associations on gentle hydrogen links with iodite or iodate will be created (principal formula):
